Celebrate the flavours of the classic Welsh rarebit in this hot cheese bake, combining Black Bomber, our award-winning extra mature Cheddar, with dark ale, wholegrain mustard and Worcestershire sauce. It makes a delicious dip for celery sticks and thickly sliced red pepper.

METHOD

1. Place cheese in a food processor and blend to a fine crumb then sprinkle over corn flour. Mix until evenly coated.

2. Add all remaining ingredients and mix to a smooth paste.

3. Place in a small shallow ovenproof baking dish and press down to get a smooth surface.

4. Bake at 180 degrees for approximately 15-20 mins until golden and bubbling.

5. Use a sheet of kitchen towel to remove any excess oil, allow to cool slightly and then serve immediately with tear & share bread.
